Brazilian Feijoada (Black Bean Dish)


- 1 package black beans
- 1 10 oz. Package Portuguese sausage, sliced
- 3 slices bacon, diced
- 1 package ham shank or ham hocks
- 1 medium diced onion
- 3 cloves garlic
- 1 tbsp. Tomato paste
- 2 bay leaves
- Salt and pepper to taste
- 1 tbsp. Olive oil

How to Prepare:

Wash beans in running water. Fry bacon in a pot over medium high heat for 1-2 minutes until brown, add sausage and fry for another 1-2 minutes, add the ham hocks and stir to combine. In a saute pan fry onions in olive oil over medium heat until golden, add garlic, cook for 1 minute. Add tomato paste, stir for 1 minute. Add mixture to the pot with sausage, add the beans and add water to fill half to ¾ of the pot, depending on the size of your pot, add some salt and pepper to taste. Cook on medium heat till beans are tender about 1 ½ to 2 hrs. If you are using a pressure cooker, cook about 1 hr. If the beans appear dry, add water. It should be the consistency of a thick soup. Once beans are cook adjust salt. Serve over rice.
